Title: Mediterranean Tomato Salad
Categories: Diabetic Vegetable Salad
Yield: 6 Servings

SALAD
4 Tomatoes; thinly sliced
1lgCucumber;
1/4cBlack olives; sliced
1/4cScallions; thinly sliced
1cCelery; sliced
1/4cMint; chopped
3tbParsley; chopped
2clGarlic; minced
DRESSING
1/4cOlive oil;
2tbLemon juice;
3/4tsSalt;
  Black pepper;to taste

Place tomatoes in a large serving dish. Peel the cucumber. Halve lengthwise, seed & slice thinly. Add to the tomatoes. Add the remaining salad ingredients, toss & set aside.

DRESSING: Whisk together all the dressing ingredients in a small bowl. Pour this dressing over the salad, toss gently & refrigerate until ready to use.
